每天早上還未到9時半的開門時間,就已有街坊在鋪面前排隊等待,只為那新鮮出爐的豬腳薑。豬腳十分大塊,剪開足足可以塞滿一碗,每咬一口都能感受到豬皮內的膠原蛋白填滿口腔,肉質嫩滑且醋味十足。再來一口表皮已經熬製成醋紅色的薑醋蛋,雞蛋內早已入味,而蛋黃可以搭配著姜醋湯一起喝,瞬間您會覺得體內熱血沸騰,碩大的汗珠早已出現在您的額頭之上,非常享受。

Housed in the Tamagnini Barbosa Municipal Market Complex, Kin Kei Pork Knuckles and Ginger Stews has lasted for over three decades, while the wonderful flavour of its classic dish remains the same.

Every day before the restaurant opens at 9:30, people line up at the doorsteps to get the fresh-made Pork Knuckles and Ginger Stews. A bowl filled up with tender and juicy pork trotters can provide you with abundant collagen and calcium. The egg in the bowl, soaking the vinegar and sauce, pairs perfectly with the steaming ginger soup. Only one sip will warm you up like a charm.

英記糖水小食位於澳門人口密集的臺山老城區內,普普通通的店在街道兩旁十分不起眼,店內的裝修風格也保持著幾十年不變,就像這裡的味道一樣。店鋪內不大,裡面沒有一桌一椅,但卻有著澳門最地道的風味小吃。

這裡的辣魚豬扒包最為出名,是每次前來拜訪的必點特色美食。與傳統澳門豬扒包十分不同,辣魚豬扒包並非酥脆多汁,老闆將另一味澳門風味小吃咖喱辣魚當成醬料,厚厚的一層塗在豬扒包內。而剛烤好的白麵包十分鬆軟,馬上就吸收了辣魚咖喱汁的味道,搭配著大片現烤豬扒,一口下去,豬扒的香味加上辣魚的鮮味,別具風味,也是別處吃不到的特色美食。

除了辣魚豬扒包外,據老闆介紹,幾十年味道不變的青豆包也是街坊們的心頭最愛,粒粒青豆熬至口感分明,加上午餐肉與老闆特調的綿綢醬汁,香氣逼人。至於店內另一必吃之選雞絲碗仔翅,足料雞絲配上店家自行烹調湯底,令人欲罷不能,一吃再吃。

Located in Tamagnini Barbosa, Ieng Kei looks no different from any other teeny stores nearby. The decors inside haven’t changed for years. Here you will find the most authentic local specialties in Macau.

Unlike the traditional pork chop buns, the Pork Chop Bun with Spicy Fish Curry here is flavoured with creamy spicy fish curry, which is slathered on the big slice of tender pork chop inside the warm and soft toasted buns. You will enjoy the layered flavour which cannot be duplicated elsewhere.

The other must-try is the delicious Mung Bean Bun, which is the most beloved dish of the regulars. Huge mung beans are slow-simmered until they are soft and tender, added with luncheon meat and the creamy “secret sauce”. Another signature dish here is the Shark Fin Soup with Shredded Chicken, which has a rich flavour.

肥姨是一個和藹可親的老人,無時無刻都是笑容滿面的她,半生都忙碌在臺山街市內。開店至今已有40年的歷史,但肥姨卻依然熱愛自己這點小事業。本該到了退休的年紀,但卻還不想與社會脫軌,每天也不顧家人們的勸說,風雨無阻堅持著。

肥姨的夾餅可以說是非常實在,從不偷工減料,被問及是否有秘方的時候,她笑笑的說道:“ 哪有秘方?只要買最好的材料,每天早起做足準備,不要偷工減料,那麼人人做的夾餅都會好吃。”確實,走進臺山街市大門,一定會有一股雞蛋夾餅香味撲鼻而來。每塊夾餅是現做現賣,塗上厚厚的牛油之餘,並根據個人喜好有花生醬和煉乳可供選擇。而肥姨也一點都不吝嗇,一定要將夾餅塗滿才肯甘休。熱辣辣的夾餅,不單只是美味這麼簡單,還有一份肥姨的40 年來做好夾餅的堅持在裡面。

40 years ago, Auntie Fei opened a small waffle stall in Tamagnini Barbosa Municipal Market Complex. She loves what she has been doing, and she’s no quitter. After 40 years, Auntie still insists on making delicious waffles every morning for customers.

When asked if she had some secret ingredients added in the batter, Auntie laughed and shrugged off the question, “no. I just always get up early and prepare the best ingredients.” The freshly made waffles are produced on the spot, drizzled with a generous amount of peanut butter sauce and condensed milk. It is not only a delectable snack but rather a manifesto of Auntie’s passion and persistence to offer the best waffles for her community.
