COCO 日式Tea Set 配 Matsu no midori茶湯

The Mira Hong Kong 的行政餅廚 Jean-Marc Gaucher 為 COCO 創作一系列以抹茶為主調的日式甜點,選用頂級京都宇治抹茶製作,在細味和式風情的同時,也注入日本崇尚的茶道精神一起品嚐,Jean-Marc Gaucher 認為享用抹茶甜點時,輕呷預先以茶筅攪拌茶粉而成的 Matsu no midori 茶湯,令味蕾昇華,讓身心投入寧靜的環境及平和的心境,茶湯配和風甜點,齊齊為炎炎夏日消暑。

日式 Tea Set 的甜品中,以紅桑子宇治抹茶奶酪蛋糕最為搶鏡,除了顏色引人垂涎外,宇治抹茶與奶酪蛋糕的配合可說是最佳拍檔,抹茶完美中和了奶酪蛋糕的甜膩,配上酸甜的紅桑子粒,清新得令人忘記炙熱的太陽。抹茶系列還有抹茶鬆餅及抹茶可麗露可選擇,除了抹茶系列外,沖繩紫薯片黑芝麻杯子蛋糕同樣令人心動,鬆軟的杯子蛋糕是 COCO 的馳名出品,加入香濃的黑芝麻及自製的紫薯脆片!一軟一脆的口感互相交織,滿載驚喜!至於行政餅廚推介配搭的Matsu no midori茶湯,質感柔滑味道甘甜,與日式甜點共嚐,緩緩引領你進入抹茶的茶道世界,寧靜而清雅。

Enjoy a rare moment of peace while savoring The Mira Hotel’s Executive Pastry Chef Jean-Marc Gaucher’s creation. His Matcha Afternoon Tea Set uses premium grade Uji matcha from Kyoto. In addition to sampling Japanese flavors, the tea set incorporates the zen aspects of a traditional tea ceremony. While tasting the exquisitely prepared matcha desserts, Gaucher believes that the perfect complement is to sip a lightly whisked cup of ceremonial grade Uji Kyoto Matsu no midori matcha for a truly calming and soothing experience.

Among the desserts is a refreshing raspberry and Uji matcha cheesecake. There’s also a matcha cranberry scone and matcha canele. In addition to the matcha-flavored sweets, there’s a nuri goma cupcake topped with an Okinawan purple potato chip. The surprising combination of the crunchy chip with the soft cupcake is simply delightful.

葡式蛋撻是澳門特色小吃的代表作,這次由澳門君悅酒店餅房主廚吳永謀負責為它變奏,為了突出甜味的層次,精心挑選與木糠布丁及葡式冰淇淋杯合湊出這款葡式甜品拼盤,再配上 Graham 10 Year Old Tawny 葡萄砵酒,為熱辣辣的炎夏抹上醉人甜味。

這裏的葡撻全是餅房人手製作,每天限定出爐,相比於市面的葡撻,味道較為輕身,甜度適中,蛋漿的奶油味則更濃郁厚滑;外面一層層的酥皮經過烘焙後,鬆脆無比,內滑外脆層次分明,配合着餅房精心製作的木糠布丁,一啖一啜都讓人回味無窮。這裏的木糠布丁與別不同之處,是加入了蛋白糖霜,使布丁鮮奶油甜而不膩,再呷一口葡式香滑牛奶冰淇淋,多重的甜味在口腔內徘徊不散,令整個人都沉醉在甜香之中。葡式甜品拼盤是以牛奶和鮮奶油作佐料,配上口感較強烈的葡萄砵酒 Graham Tawny,酒香濃郁並散發着橘子、玉桂、西梅、葡萄乾和無花果的芳香。味道雖然偏甜,卻因高濃度酒精恰好與鮮奶油巧妙地融合,成就出一種令人心醉的搭配。

The Portuguese egg tart is one of Macau’s ubiquitous foods. Grand Hyatt Pastry Chef Regis Monges has tried to put his own spin on this perennial favorite by creating a soufflé and an ice cream sundae inspired by the egg tart’s flavors. To complement these sumptuous sweets, he has chosen the Graham 10-year-old Tawny Port. A limited quantity of egg tarts are handmade in the kitchen each day. Mezza9’s egg tarts taste lighter than most, not overly sweet. The intense, full-bodied Graham Tawny Port brightens up the rich and creamy Portuguese dessert platter with tastes of oranges, cinnamon and figs.

An article about desserts cannot leave out chocolate. Dominique Bugnand, Mandarin Oriental Macau’s Director of Culinary Operations and Food & Beverage, and Executive Pastry Chef Sebastian Bernis have created a magical afternoon tea set called Afternoon FANtasy, highlighting rich chocolate cakes paired with velvety Valrhona hot chocolate made from one of three different flavors. Among the desserts is a chocolate hazelnut cake with a layer of chocolate mousse and a crispy hazelnut and chocolate bottom. There’s also an dark chocolate cake with rich, dark chocolate sauce oozing from a moist, sponge cake.
