位於商業中心頂樓的SKY 21,面積達二萬平方呎,彷如漂浮在澳門鬧市的空中花園,坐擁270°無敵風景,飽覽全澳景致。樓高兩層連空中天台共分為多個主題區,包括21樓的亞洲當代美食專區、22樓的Sky B Bar及Sky Life幻燈舞台。主廚Jordan在馬來西亞開始其餐飲職業生涯,把烹飪天賦帶進多家著名的酒店並在其中盡展所長,當中包括吉隆坡文華東方酒店、澳門金麗華酒店等努力不懈地精進廚藝。憑藉其對烹飪的熱愛和熱誠,Jordan以上乘食材為餐飲哲學的核心,並為傳統菜式注入現代元素。他的創新遠見和對卓越品質的追求,為SKY 21的菜單帶來了新的力量和啟發,能夠更好地為客人提供最優質的美食。
Jordan推薦的招牌菜包括蜜糖M5戰斧牛排、西班牙黑毛豬肋骨及西班牙海鮮燴飯。每道菜均由他悉心製作,並以精緻賣相呈現賓客眼前。Jordan向我們介紹:“ 蜜糖M5戰斧牛排,我們採選用了肉質最頂級的M5和牛,有別一般西餐的烹調方法,我特別作出了一點改良,以叉燒的醃製方式處理和牛,令食客可以品嚐到和牛豐富肉質的同時,又感受到陣陣的叉燒風味。西班牙黑毛豬肋骨,我們則選用伊比利亞黑毛豬,以慢煮方式烹調,以確保肉質軟腍。至於傳統西班牙海鮮飯,飯粒帶有al dente的獨特口感,軟硬適中,加入新鮮海蝦及蜆肉,令飯粒味道更豐富,令人回味無窮。”除了Jordan的招牌菜,於SKY 21還可品嚐到好像墨西哥牛肉醬薄餅、馬來西亞海鮮叻沙與雜錦壽司等多國菜式,總有一款合您口味。

Located on the top of a commercial building with an area of 20,000 sq. ft., SKY 21 is like an oasis floating atop Macau featuring a 270° panoramic view of the city skyline. The two-floor venue is divided into specific theme areas, including “Contemporary Pan-Asian Cuisine” on the 21st floor, “Sky B Bar” and “Sky Life” stage on the 22nd floor.
Started his catering career in Malaysia, Chef Mah has worked in some of Asia’s most notable hotels such as Mandarin Oriental, Kuala Lumpur and Grand Lapa Macau. With his love and enthusiasm for cooking and culinary philosophy of using top ingredients, Chef Mah reinterprets elements of traditional dishes with modern twist. His vision and pursuit of excellence have brought new inspiration to the menu of SKY 21.
Signature dishes recommended by Chef Mah include Honey Glazed M5 Wagyu Tomahawk, Iberico Baby Back Rib and Seafood Paella. Each dish is meticulously prepared with exquisite presentation. “For Honey Glazed M5 Wagyu Tomahawk, we have chosen the high quality M5 Wagyu and cooked with new twist. By marinating Wagyu beef, guests can taste the soft and juicy texture of Wagyu beef with the flavours of barbecued pork. Iberico Baby Back Rib is slow-cooked to get the tender texture. As for the traditional Seafood Paella, the rice has the unique al dente texture. It is amazing to eat with fresh prawns and clams,” said Chef Mah. In addition to the above dishes, there are also multinational cuisines like Chili Con Carne Pizza, Seafood Laksa and Assorted Sushi.
