Among the Michelin-starred restaurants in Macau, Robuchon au Dôme is one of the region’s top dining destinations craft by the late, world’s most Michelin-starred chef Joël Robuchon, which introduces French fine dining for Macau foodies with extraordinary significance.

Robuchon au Dôme is known for its superb menu of French gastronomic cuisine, the enchanting atmosphere and finest wines. It is situated in the dome of Grand Lisboa which is 238 m height and features a magnificent view of Macau. Boasting the most extensive wine collection with over 17,000 labels, the restaurant has been honored with the Wine Spectator’s “Grand Award” yearly since 2005. From now until December, Grand Lisboa’s selected restaurants including Robuchon au Dôme shall offer the finest collection of Magnum wines paired with exquisite dishes.

The executive chef Julien Tongourian has been collaborating with Joël Robuchon for over 20 years. Both as perfectionists, they are equally relentless in the pursuit of the harmony between individual ingredients in a dish through countless trial. The restaurant’s signature dish “Impérial caviar and king crab refreshed with crustacean jelly and light cauliflower cream” perfectly harmonizes the deep flavor of the caviar and the silkiness of the cauliflower cream.

Another popular dish “Beef châteaubriand and foie gras, “Rossini” style and vintage port wine” strikes the right balance between the rich foie gras and the succulent beef with precise proportions. “Black cod and Malabar pepper sauce, bok choy and coconut foam” will surprise seafood lovers. The heat from the spicy pepper sauce blends with the sweetness of the coconut foam, and together with the flavourful black cod they are a match made in heaven.
